Spring Spiced Spinach

Ingredients:
1 lb fresh organic spinach, washed
1 tbsp ghee
2 tsp spring spice blend
2 tbsp filtered water or homemade vegetable stock
½ tsp mineral salt
Garnish with fresh cilantro leaves and a squeeze of lime

Directions:
1. Heat ghee over medium heat until melted. Add in the Spring Spice Blend and cook until fragrant.

2. Add the spinach and stir to coat in ghee and spices. Cook in the pan for 1-2 minutes.

3. Then add the water or vegetable stock and salt. Cover, lower heat slightly and simmer for 2-4 minutes, until wilted and cooked through.

4. Serve warm with a sprinkle of fresh cilantro leaves on top and a squeeze of lime.
