How to Make Ayurvedic Vegetables Video

Ayurvedic Vegetables

Ingredients:
1 tbsp ghee
2-3 cups vegetables of your choice
¼ cup homemade vegetable stock
1 tsp coriander seeds
¼ tsp cumin seeds
¼ tsp turmeric powder
1 tsp fresh ginger, grated
½ tsp curry powder
½ tsp mineral salt
Garnish with fresh cilantro

Directions:
1. First, grind your coriander seeds in a mortar and pestle.

2. Then melt 1 tablespoon of ghee in a pan over medium heat until the ghee is fully melted.

3. Once the ghee is melted, add all the spices to the ghee and saute until fragrant.

4. Add the vegetables to the pot and stir to coat in the ghee and spices. 

5. Add ¼ cup of vegetable broth and ½ tsp of salt and cover pot, reduce heat and lightly simmer for 5-10 minutes depending on which vegetable you are using.

6. When the vegetables are ready, remove the lid and stir.

7. Serve with a sprinkle of cilantro on top.
