Indian-Spiced Rice Pilaf

Ingredients:
1 cup basmati rice
2 cups water
1 tbsp ghee
5 green cardamom pods
5 whole cloves
1 bay leaf
1 cinnamon stick
¼ tsp turmeric powder
½ tsp salt
¼ cup toasted cashews
¼ cup raisins
½ tsp fresh grated ginger

Directions:
1. On medium heat, add oil/ghee to a pan. Once oil is hot add the spices, cashews and raisins and stir to coat in the oil/ghee.

2. Add the fresh grated ginger and cook another 1-2 minutes.

3. Add the rice and stir to coat in the oil.

4. Add the water and turn heat to high until the water boils.

5. Once the water boils, cover and turn heat to low and cook for 20 minutes.
